Pretreatment: Freezing

Advantages of freezing:
 -The cell walls burst and the juice yield is therefore larger.
 -This triggers a chemical process - convert starch to sugar (food for the yeast)
 -A great number of bacteria, fungi and spores are killed.
 -Convenient storage for fruits or berries that you want to use for wine
